This delicious mild sweet carrot dish is not your typical carrot salad. It is served warm!
  • 3 cups shredded carrots
  • 1 cup red wine vinegar
  • ½ cup sugar
  • 1 quart water
  • ¼ cup strawberry preserves
  • ½ tablespoon kosher salt
  1. Place the shredded carrots, vinegar, sugar and water in large heavy pot.
  2. Bring liquid to a boil then reduce heat and simmer uncovered for approximately 1-2 hours, or until liquid has reduced to a syrup like consistency, stirring occasionally.
  3. Add the strawberry preserves to the carrots and stir until fully mixed.
  4. If it is too sweet for your liking, you can adjust the sweetness by adding a little more salt.
  5. Serve warm.
