This is a sweet and delightful complement to pork, ham or turkey.
Ingredients
  • 1½ cup sugar
  • 1 cup dairy free butter, softened
  • 2 eggs
  • 1 12-oz can pineapple chunks with juice
  • ¾ cup Silk Vanilla creamer
  • 1 loaf Udi's gluten free white bread
Instructions
  1. Trim crust from bread, cut into cubes and set aside.
  2. Cream butter and sugar.
  3. Add eggs and mix well.
  4. Mix in pineapple juice and cream.
  5. Stir in pineapple chunks and bread cubes.
  6. Pour into 2 quart casserole dish.
  7. Bake at 350 for 1 hour
Notes
The original recipe uses butter instead of butter substitute, heavy cream instead of Silk Vanilla creamer and Pepperidge Farm Original White Bread instead of Udi's white bread.
