Enjoy this quick healthy FODMAP Free spinach dish. It provides a good balance for a heavy entree such as steaks and chops!
  • 16 ounces baby spinach
  • ⅓ cup green onion, diced (green part only)
  • 1 tablespoon olive oil
  • salt & pepper to taste
  1. Pre heat oil in a large heavy bottom sauté pan on high heat.
  2. Add the diced green onion and sauté until tender.
  3. Add the baby spinach and cook. only until spinach leaves are wilted.
  4. Season with salt and pepper and toss well.
  5. Remove from pan and keep warm until ready to serve.
Be sure to cook only until the spinach leaves are wilted. Fresh spinach reduces dramatically when cooked.
