A quick, healthy and delightful salad to accompany any mean.
Ingredients
  • ¾ pound fresh green beans, cleaned
  • 2 stalks celery, diced
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon coarse ground pepper
  • 3 tablespoons olive oil
  • 2 tablespoon green onions, diced (green part only)
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons capers
Instructions
  1. In a small bowl, whisk together lemon juice, Dijon mustard, pepper and olive oil.
  2. Mix in green onion, capers, parsley and celery.
  3. Clean and cut the green.
  4. Bring 2 quarts water to boil.
  5. Add the green beans to the boiling water and boil until crisp-tender (approximately 4-6 minutes).
  6. Drain beans and place in medium bowl.
  7. Stir dressing to ensure it is reconstituted, pour over green beans and toss well.
  8. Serve immediately.
