Bring a bit of the Mediterranean to you barbecue with these delightful goat cheese stuffed tomatoes!
Ingredients
  • 12 Campari tomatoes
  • 1½ teaspoons extra virgin olive oil
  • 6 ounces fresh goat cheese
  • 1½ teaspoon chopped fresh oregano
  • Sea salt and coarse ground pepper, to taste
Instructions
  1. Heat broiler.
  2. Wash tomatoes and pat dry.
  3. Place tomatoes, stem side up, on a rimmed baking sheet and brush with oil.
  4. Broil just until skins blister, 1 minute.
  5. In a small bowl, lightly mash goat cheese and stir in oregano, salt and pepper.
  6. Cut the top off of the tomato (approximately ⅛ inch) and gently remove the pulp.
  7. Fill each tomato with the cheese mixture.
  8. Replace the tops.
  9. Garnish with fresh herbs (oregano or basil).
Notes
* Can be made the day before. Just store, covered in the refrigerator. Bring to room temperature before serving.
