This FODMAP Free soup will warm you on chilly Fall and Winter days!
  • 3 chicken breast
  • 3 bay leaves
  • 8 cups cold water
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 red or yellow pepper, diced
  • ½ cup diced carrots
  • ¼ cup diced celery
  • 1 teaspoon red pepper flakes
  • ¼ teaspoon chili powder
  • 1½ cup brown rice
  • 2 tablespoon dairy free cream cheese or Greek yogurt
  1. Put all ingredients except rice and cream cheese or yogurt into a large heavy pan and bring to boil.
  2. Reduce heat to simmer and cook uncovered for 1 hour.
  3. Remove chicken from pot and cook broth, uncovered, for an additional 30 minutes.
  4. Raise heat and return broth to a boil.
  5. Add the rice and mix well.
  6. Reduce heat to simmer, cover, and cook for 20 minutes.
  7. While rice is cooking, cut up chicken.
  8. Add chicken to soup and heat for another 10-15 minutes.
  9. Remove soup from heat.
  10. In a small bowl, add 2 tablespoons soup broth to cream cheese (or yogurt) and mix well.
  11. Slowly add cream cheese mixture to soup, stirring constantly to avoid curdling.
  12. Serve immediately.
  13. Garnish each bowl with a sprig of fresh parsley.

    I have never seen lactose-free cottage cheese or yogurt – is there a particular brand? If they are not available locally where I live, do you know if they can be ordered online?



      In addition to Lactaid brand for any dairy product, many of the USA based grocery stores (Whole Foods, Safeway & Giant) also carry their own brand of lactose free cottage cheese, milk and yogurt. Also, Yoplait makes lactose free yogurt. Hope this helps!

      Yes! The soup freezes well.
