Jazz up your chicken with this peanut sauce. Can be used as a marinade, a sauce over cooked chicken or vegetables, or as a dipping sauce.
Ingredients
  • 6 tablespoons peanut butter (smooth or crunch) **
  • 6 tablespoons gluten free soy sauce ***
  • 6 tablespoons maple syrup
  • 2 teaspoons rice or white wine vinegar
  • ¼ cup water
  • 1 tablespoon grated fresh ginger (or ¼ teaspoon ground ginger), according to taste
  • 1 teaspoon peanut oil
  • 1 teaspoon cayenne pepper
Instructions
  1. Combine all ingredients in a heavy sauce pan.
  2. Bring contents to a boil.
  3. Reduce heat and simmer, stirring frequently, for 10 minutes.
Notes
** Planters peanut butter is FODMAP free. *** San-J Tamari is a FODMAP friendly soy sauce.
