Citrus fruits are FODMAP friendly. This glaze is excellent for almost any fish or meat, but is especially good on salmon and pork roast!
  • ⅓ cup dark brown sugar
  • 2 tablespoons lemon zest
  • 1 teaspoon lemon juice
  • 1½ teaspoons salt
  • ½ teaspoon coarse ground pepper
  1. Blend together all ingredients (I use a food processor, but a blender would also work).
  2. Coat fish or meat with the mixture.
  3. Wrap tightly in plastic wrap or aluminum foil and allow to marinate for at least 45 minutes at room temperature.
  4. Cook fish or meat according to your favorite way ... broil, grill or bake.
