Enjoy fall with this very unique chili. Serve in a carved out pumpkin for a dish pleasing to the eye as well as the taste buds!
  • 2 pounds ground beef *
  • 1 pound bulk sausage *
  • 2 ribs celery, cleaned and chopped
  • 1 bunch of green onions, chopped (green part only)
  • 2 cans (approximately 8 ounces total) chopped green chilies undrained
  • 2 cups FODMAP Free chili sauce (double the recipe)
  • 2 cans (approximately 29 ounces total) diced tomatoes, undrained
  • 2 cans (approximately 16 ounces total) tomato sauce
  • 1 cup canned pumpkin
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon pepper
  • 1 teaspoon ground cumin
  • ½ teaspoon fennel seed
  • 1 teaspoon red pepper flakes
  1. In a heavy skillet, brown the ground beef, celery and green onion over medium heat.
  2. Drain grease.
  3. In a small bowl, combine the dry spices.
  4. Stir dry spice mixture into the cooked ground beef and mix until beef is evenly coated.
  5. Add the remaining ingredients and mix well.
  6. Add water, if desired, to reduce thickness.
  7. Bring chili to a boil.
  8. Reduce heat, cover and simmer for at least 1 hour. Stirring occasionally.
* For a healthier version, use ground turkey. You can also use only ground beef if you don't want to use pork.

Serve this chili in a pumpkin -- either individual small pumpkins or one large pumpkin instead of a soup tureen.

To prepare a pumpkin for serving this chili, thoroughly wash the outside. Cut a circle around stem (at least 4 inch diameter). Remove top and set aside. Remove the seeds and loose fibers from inside and set aside. Rub the inside of the pumpkin with olive or canola oil. Replace pumpkin tops and place pumpkins in a shallow roasting pan. Roast 30 to 40 minutes until tender when pierced with a knife but still intact. Remove from oven and set aside.

Don't waste your pumpkin seeds! After cleaning them out of your serving pumpkin(s), separate them from the fiber and try one of our roasted pumpkin seed variations!
