FODMAP free dieters cannot have the original mirepoix because it contains onion and butter. However, other aromatics (FODMAP free or low FODMAP) often used in mirepoix are available to us, including red peppers, scallions and green onions (green part only), chives, parsnip, ginger and tomatoes. For mirepoix, the best alternative to butter is making it the Italian way ... with olive oil.
  • 1 cup green onions or scallions (green part only), chopped
  • ½ cup red carrots, chopped
  • ½ cup celery, chopped
  • ¼ cup fresh ginger, chopped (no need to peel the ginger)
  • 1 tablespoon olive oil
  1. Clean and dice the vegetables. To your best to make all the vegetables about the same size so they will cook evenly.
  2. Heat the oil over medium high heat.
  3. Sauté the vegetables until tender.
The cooked (sautéed) mirepoix can be frozen. Be sure to all it to thaw completely before using.
