Here's an option for getting dinner ready in 15 minutes. Polenta is quick, easy, versatile, and tasty!
  • Polenta (I buy cooked polenta in a tube ... it lasts FOREVER and then is easy to have on-hand)
  • Salami slices
  • Parmesan Cheese, fresh & shaved
  • Olive Oil
  • Coarse Ground Pepper, to taste
  1. Lightly grease a skillet and heat to medium high heat.
  2. Slice the polenta into ½ inch slices
  3. Sprinkle one side of each polenta slice with pepper.
  4. Add, pepper side down, to hot skillet.
  5. Cook for 4 minutes.
  6. Turn and cook for an additional 4 minutes.
  7. When polenta is finished cooking, remove from pan and place in a single layer on a serving dish.
  8. Top each polenta slice with shaved parmesan cheese and a folded slice of salami.
  9. Garnish with fresh oregano leaves (optional).
Serve with a green salad and you've got a meal with all the essential food groups covered! I've even done this with Canadian Bacon (a.k.a. small slices of ham) and sliced turkey. The salami is particularly good because it has more flavor than the ham or turkey. Be creative! Use your favorite meat or even vegetables for a vegan variation!
