A flavorful and tender dinner that is also quick and easy!
  • 1 2-pound pork tenderloin, cut into medallions approximately 1 inch thick
  • 2 tablespoons olive oil
  • 2 tablespoons San-J Organic Gluten-free reduced sodium soy sauce
  • 1 tablespoon chopped chives
  • Juice of 3 lemons
  • Coarse ground pepper
  • 2 teaspoons Dijon Mustard
  • 2 tablespoons water
  • Fresh chives or parsley
  1. Place cut meat in shallow pan and squeeze lemon juice over all.
  2. Sprinkle with pepper.
  3. Cover and refrigerate for an hour or overnight.
  4. When ready to cook, heat oil in heavy skillet on medium high heat.
  5. Place meat in hot skillet and cook for 4-7 minutes of each side (turning only once).
  6. While meat is cooking, mix together soy sauce, chives, mustard and water.
  7. Remove cooked meat to warm serving platter.
  8. Add soy sauce mixture to pan juices and cook until heated (approximately 1 minute).
  9. Drizzle sauce over meat.
  10. Garnish with fresh chives or parsley.
  11. Serve immediately.
