This is a cross between a scone and a danish, but is not quite either. A good FODMAP Free pastry alternative.
Ingredients
  • 2 cups gluten-free pancake mix
  • ¼ cup butter alternative, softened
  • 2 tablespoons white sugar
  • ⅔ cup almond milk
  • ½ teaspoon almond extract
  • ¼ cup raspberry jam **
  • 1 cup confectioners’ sugar
  • 1 tablespoon almond milk
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat oven to 400°
  2. Combine the pancake mix, butter and sugar and mix until crumbly.
  3. Stir in ⅔ cup almond milk and almond extract. Thoroughly mix together. The dough will be sticky.
  4. Drop the dough by a rounded tablespoon onto baking sheet treated with non-stick cooking spray.
  5. With the back of a teaspoon, make a shallow indentation in the center of each dough ball.
  6. Fill the centers with a teaspoon of jam.
  7. Bake for 12 minutes, or until golden brown.
  8. All the pastry to cool.
  9. While pastry is cooling, make the frosting drizzle.
  10. Combine confectioners’ sugar, 1 tablespoon almond milk and vanilla extract.
  11. Add more sugar or almond milk if necessary to make a medium thick frosting.
  12. Drizzle over cooled pastries.
Notes
** Many jams, jellies and preserves contain fructose and/or high fructose corn syrup. Those are a no-no for FODMAP free. I found Organics brand Organic Raspberry Preserves is FODMAP Free! Gluten free pastries do not have a long “shelf life” … I recommend storing any pastries not immediately consumed in the refrigerator.
