If you have ever tasted Texas Sheet Cake, this moist and delicious cake has a similar flavor. Coffee gives this cake its mocha flavor. Every chocolate fan in your house will love this cake and will never suspect it is FODMAP Free!
Ingredients
  • 1 cup brewed coffee (decaf works fine)
  • 1 cup unsweetened cocoa powder
  • ½ cup hot water
  • ½ cup almond milk (room temperature or warmer)
  • 3 cups gluten-free all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum
  • 1 cup dairy-free butter
  • 2½ cups sugar or evaporated cane juice
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray the sides only of pan(s) with non-stick cooking spray. I use Pam for baking. Line the bottom of the pan(s) with wax paper
  3. In a medium bowl, mix together (I use a whisk) the dry ingredients (flour, baking soda, baking powder, salt and xanthan gum) and set aside.
  4. In a small bowl, mix together the coffee and cocoa powder until smooth.
  5. In a large bowl the dairy-free butter and sugar and beat at medium speed until light and fluffy (approximately 5 minutes).
  6. Add the eggs, one at a time, to the butter/sugar mixture and mix well after each.
  7. Add the vanilla to sugar mixture and mix well. Scrape sides of the bowl occasionally with a rubber spatula to ensure thorough mixing.
  8. Mix continuously on medium speed while adding half the dry ingredients and half the coffee/cocoa mixture to the sugar/egg batter. When mixed thoroughly, add the remaining dry ingredients and coffee/cocoa mixture and blend until smooth (approximately 2 minutes).
  9. Spoon the batter equally into prepared pan(s).
  10. Bake in preheated oven for about 40 minutes.
  11. Oven temperatures vary, so adjust baking time accordingly.
  12. Cake is done when toothpick inserted comes out clean.
  13. Remove cake from oven and cool in pans for 20 minutes.
  14. Allow cake to cool completely on a wire rack before frosting.
Notes
Makes enough to frost one 14-inch square sheet cake, two 9-inch layers, three 8-inch layers OR 36 cupcakes Time estimates include cooling time. While cake is cooling, make Mocha "buttercream" frosting to finish off this decadent FODMAP free cake!

    This sounds delicious but I typically don’t like mocha flavored food. Is there something I could substitute for the coffee?

      You could try adding water with some almond extract or one of the dairy free flavored coffee creamers, such as French Vanilla or Hazelnut. Let us know what you try and how it comes out!
