FODMAP Free dieters can now fill the cookie jar with FODMAP Free sugar cookies! An old-fashioned favorite that never goes out of style. Can be frosted with your favorite FODMAP Free Icing or left plain. The dough will also freeze nicely if you want to make it ahead.
  • 3 cups gluten free all-purpose flour, sifted
  • 1½ cups oat flour *
  • 2 teaspoons xanthan gum
  • 5 teaspoons baking powder
  • pinch salt
  • 1½ cups dairy free butter, room temperature
  • 1½ cups white sugar
  • 3 large eggs
  • 1 tablespoon clear vanilla or almond extract
  1. In a medium bowl, whisk together the flours, baking powder, xanthan gum and salt. Set aside.
  2. With an electric mixer, beat dairy free butter and sugar on high, until light and fluffy.
  3. Beat in eggs, one at a time, beating until each egg is completely mixed in before adding in the next.
  4. Beat an extra minute or two after adding the last egg.
  5. Add vanilla (or almond) extract and beat well.
  6. With the mixer on low, gradually beat in the flour mixture, and mix until completely combined.
  7. Remove dough from mixing bowl, and form into a large disc.
  8. Tightly wrap dough with plastic wrap, and refrigerate until firm, about 2 hours or longer. The dough can be frozen or stored in an air tight container.
  9. When you ready to make the cookies, preheat oven to 350° F.
  10. Line a baking sheet with parchment or wax paper.
  11. Roll out the dough onto a floured surface (be sure to use gluten free flour) to a little less than ½ inch thickness.
  12. Using cookie cutters, cut into desired shapes, and place on the cookie sheet.
  13. Cookies will spread very little, so they can be only about 1" apart.
  14. Bake cookies 9-11 minutes or until just puffed and set.
  15. Remove cookies before they have begun to brown around the edges to ensure a soft cookie!
  16. Let cool, then transfer to a wire cooling rack.
* Oat flour, gluten free or not, is low FODMAP.

Let the cookies cool completely before icing.

Sprinkle the cookies with granulated sugar before baking to add an extra bit of sweetness.
