Made this as a birthday cake and everyone enjoyed it --- they couldn't believe it was gluten and lactose free!
Ingredients
  • ½ cup shortening *
  • 1½ cup sugar
  • 3 eggs
  • 2 ounces red food coloring
  • 3 tablespoon cocoa
  • 1¼ cup oat flour
  • 1 cup gluten free all purpose flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 1 cup almond milk
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 2 tablespoon rice vinegar
Instructions
  1. Preheat oven to 350° F.
  2. Spray sides of 2 9" cake pans with non-stick cooking spray.
  3. Line the bottom of the pans with wax paper.
  4. Make a paste of the red food coloring and cocoa by adding a little food coloring at a time to the cocoa until well mixed and set aside.
  5. Add 1 tablespoon of the rice vinegar to the almond milk and set aside.
  6. Sift together oat and gluten free all purpose flours, xanthan gum and salt and set aside.
  7. Cream shortening and sugar with an electric mixer on medium speed.
  8. Add eggs and beat well.
  9. Add red cocoa paste to shortening & sugar mixture and beat on medium speed until completely combined.
  10. Mixing constantly, alternate adding the sifted flour mixture and the almond milk & vinegar mixture and vanilla and beat until well combined.
  11. Dissolve baking soda in vinegar and add immediately to the batter as the very last ingredient and mix well.
  12. Do not over beat. Cake batter will be a little elastic in texture, but this is normal for gluten free cake batter.
  13. Divide batter equally into prepared 9” pans and gently spread batter to the pan edges.
  14. Bake at 350° F for 30 minutes or until toothpick inserted comes out clean.
  15. Cool completely before icing.
Notes
* For best results, use butter flavored Crisco solid or coconut oil or a combination of both. Lactose free butter substitute is a little too soft; if that's all you have, place "butter" in the freezer for 30 minutes prior to using.

VARIATION: To jazz up the outside of the cake, sprinkle the top with red sugar spinkles.
