Who doesn't love peanut butter and jelly??? Have the FODMAP Free way with these delicious blondies!
Ingredients
  • ¾ cup lactose free butter
  • 1 tablespoon coconut oil *
  • 1½ cups oat flour
  • ¾ teaspoon xanthan gum
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups packed light brown sugar
  • 2 large eggs, beaten
  • 4 teaspoons clear vanilla extract **
  • 1 cup peanut butter
  • ¾ cup crushed roasted peanuts
  • ½ cup raspberry, strawberry or grape preserves ***
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Line pan with heavy foil and spray thoroughly with non-stick cooking spray. **
  3. In a small sauce pan, melt the lactose free butter and coconut oil. Remove from heat and allow to cool.
  4. Whisk together the flour, xanthan gum, baking powder and salt in a small bowl.
  5. In another bowl, mix the melted lactose free butter / coconut oil and brown sugar until combined.
  6. Add in the eggs and vanilla, and mix until combined.
  7. Add the dry ingredients to the lactose free butter mixture and gently fold with a spatula until uniform.
  8. Spread the batter mixture evenly in the baking pan.
  9. Place all the peanut butter in dollops on the top of the batter.
  10. Spoon the preserves onto the top of the batter.
  11. Sprinkle the peanuts evenly on the batter.
  12. Using a spatula or wide knife, make swirly patterns into the batter with the peanut butter, preserves and peanuts.
  13. Bake 30 to 35 minutes or until knife inserted comes out clean. ***
  14. Cool completely in pan.
  15. Remove cooled blondies from pan and cut into squares.
Notes
* Can substitute 2 teaspoons canola oil if you do not tolerate even small amounts of coconut.


** Clear vanilla extract is FODMAP Free. The brown vanilla extract is low FODMAP.


*** Be sure to get preserves that do not have high fructose corn syrup.


**** Leave enough foil around the edges that you can lift out the blondies once cooked and cooled.


***** The top of the blondies will be shiny.
