If life gives you lemons, make lemon squares! No one will know (or care) that these delicious lemon squares are FODMAP Free!
Ingredients
  • For the crust:
  • ½ cup dairy free butter substitute
  • 1 tablespoon solid coconut oil
  • ½ cup granulated sugar
  • 2 cups gluten free oat flour
  • 1 teaspoon xanthan gum
  • ¼ teaspoon salt


  • For the filling:
  • 7 large eggs
  • 2 cups turbinado sugar
  • 1 cup granulated sugar
  • 2 tablespoons grated lemon zest (4 to 6 lemons)
  • 1 cup lemon juice
  • 1 cup gluten free oat flour
  • Powdered sugar, for dusting
Instructions
  1. Preheat the oven to 350° F.
  2. To make the crust, in a large bowl cream the butter substitute, coconut oil and sugar with an electric mixer until fluffy (approximately 10 minutes).
  3. In a separate bowl, sift together the oat flour, xanthan gum and salt.
  4. With the electric mixer on a medium to low speed, gradually add flour mixture to butter mixture. Beat only until combined. Do not over mix or the crust will become "hard".
  5. Turn out dough onto a floured surface, flour your hands, and shape dough into a ball, kneading slightly as you form the ball.
  6. Spread the dough evenly into a 9" x 13" ungreased baking pan. I line the pan with aluminum foil so I can easily remove the finished pastry for final cooling, dusting and cutting.
  7. Chill dough, in pan, and loosely covered in the refrigerator for at least 30 minutes.
  8. Remove crust from refrigerator and bake for 20 minutes, or until lightly browned.
  9. Cool crust for 30 minutes.
  10. While crust is cooling, make the filling.
  11. To make the filling, beat eggs, sugar, lemon zest, lemon juice, and flour with an electric mixer on medium speed for 8 minutes.
  12. Pour filling over the cooled crust and place in the oven.
  13. Bake pastry for approximately 35 minutes or until the filling is set (not runny).
  14. Allow the baked pastry to cool to room temperature before cutting and dusting with powdered sugar. If you have lined the pan with foil, gently lift the partially cooled pastry from the pan and place it on a flat surface to finish cooling.
  15. Cut into squares and generously dust with powdered sugar.
  16. Allow squares to sit for at least 15 minutes, after dusting, before serving.
Notes
Use a chilled knife dipped in ice water for easy (no sticking) cutting.

Lemon squares will last for about 5 days in the refrigerator if stored in an air tight container.

    The crust ingredients list says to use: coconut oil; however in the instructions it is not included. Is it needed?

    I see in the list of ingredients it just say 1 cup granulated. I am assuming that’s white sugar but would like to double check.
