Lemon curd (or custard) is has a tart, refreshing flavor, making it the perfect base for your FODMAP Free Lemon Raspberry Tart. It is also a delicious complement to toast, scones, or muffins.
  • 1 cup granulated sugar
  • 1 tablespoon finely shredded lemon zest
  • 1 cup lemon juice (about 5 large lemons)
  • 3 tablespoons firm dairy free butter
  • 3 large eggs, slightly beaten
  1. In heavy 1½-quart saucepan, mix sugar, lemon peel and lemon juice with wire whisk.
  2. Stir in butter and eggs.
  3. Cook over medium heat, about 8 minutes, stirring constantly, until mixture thickens and coats the back of a wooden spoon (do not boil).
  4. Immediately pour the custard a bowl and lay plastic wrap directly on the custard/curd and seal at the edges.
  5. Chill for 4 hours.
The curd may be stored in the refrigerator for up to 2 months in an air tight container.

OPTION: Using this same recipe, you can make Lime Curd. Simply substitute lime peel for the lemon peel and lime juice for the lemon juice.
