If you don't like pie crust or just don't want to take the time to make it, this pie is for you. Delicious and easy!
  • ¾ cups granulated sugar
  • ½ cup gluten free Bisquick
  • 4 eggs
  • 1 can (15 ounce) pumpkin
  • 1½ cups lactose free French vanilla creamer *
  • ½ teaspoons clear vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • pinch of ground nutmeg
  1. In a blender, mix together all ingredients, EXCEPT Bisquick, until well combined.
  2. Add Bisquick and blend well.
  3. Pour into a well greased 9 inch pie plate.
  4. Bake at 350° F. for 50-55 minutes or until a knife inserted near the center comes out clean.
The Bisquick will settle and form a slight crust.

* In a pinch, you can substitute lactose free whole milk or a combination.
