Delicious! No one knew it was FODMAP Free!
  • 12 tablespoons dairy free butter substitute, softened
  • 1½ cups sugar
  • 2½ cups all-purpose gluten free flour
  • 2 teaspoons xanthan gum
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 6 large egg whites (3/4 to 1 cup), at room temperature
  • ¾ cup lactose free whole milk
  • 2 teaspoons clear vanilla extract
  • 3 9-inch round cake pans
  1. Preheat oven to 350 degrees.
  2. Spray the sides of the pan(s) with non-stick cooking spray and line the bottom with wax paper.
  3. In a large mixing bowl, beat butter and sugar for about 10 minutes, until light and fluffy.
  4. Sift flour into a large bowl.
  5. Whisk together flour, xanthan gum, baking powder and salt. Set aside.
  6. Combine the milk and vanilla extract.
  7. Add half the flour mixture to butter mixture then add half the milk mixture, mixing constantly, then repeat until all ingredients, except the eggs, are combined. Scrape bowl and beater often and do not over mix.
  8. Whip egg whites until soft peaks form.
  9. Fold egg whites into cake batter.
  10. Pour batter into prepared pans.
  11. Bake cake about 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  12. Cool in pan on a rack for 5 minutes, then turn out onto a rack, remove paper and let cool completely.
This White Cake can easily be a CLASSIC YELLOW CAKE -- just substitute 4 large eggs for the egg whites.
