A great FODMAP free cookie! Enjoy it with a glass of Homemade Rice Milk or FODMAP Free Salted Caramel Ice Cream!
  • 2½ cups all-purpose gluten free flour, sifted
  • 1 teaspoon baking soda
  • 1½ teaspoon xantan gum
  • 1 teaspoon salt
  • 1 cup dairy free butter or ½ cup coconut oil & ½ cup dairy free butter
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 teaspoon clear vanilla extract
  • 2 large eggs
  • 2 egg whites
  • 1 (12 ounce) package FODMAP Free Chocolate Chips
  • 1 cup chopped nuts, optional
  1. Preheat oven to 375° F.
  2. Combine sifted gluten free flour, baking soda, xantan gum and salt in small bowl.
  3. Beat dairy free butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.
  4. Add the 2 large eggs, one at a time, beating well after each addition.
  5. Gradually beat in flour mixture, beat only until well combined.
  6. Beat the 2 egg whites until soft peaks form.
  7. Fold egg whites into batter.
  8. Stir in morsels and nuts.
  9. Drop by rounded tablespoon onto ungreased baking sheets.
  10. BAKE for 9 to 11 minutes or until golden brown.
  11. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Instead of individual cookies, spread dough onto 11x17 baking pan for cookie bars. This is great for making FODMAP Free ice cream sandwiches!
