We've been making this fabulous cake for years ... highlights the blueberries and is not overly sweet. Now adapted to be FODMAP friendly!
Ingredients
  • 1 C lactose free butter
  • 2 C sugar
  • 3 eggs
  • 3 C oat flour
  • 1½ teaspoon xanthan gum
  • 1½ t baking powder
  • ½ t salt
  • ¼ t mace or nutmeg
  • ½ C lactose free whole milk
  • - - - -
  • 2 C blueberries
  • 2 t sugar
  • 2 t oat flour
Instructions
  1. Preheat oven to 375°.
  2. Combine flour, xanthan gum, baking powder, salt & nutmeg / mace and set aside.
  3. Cream lactose free butter & sugar until light and fluffy.
  4. Add eggs, one at a time.
  5. Alternatively add flour mixture and milk into butter mixture. Beating well after each addition.
  6. Mix together the 2 t sugar and 2 t oat four.
  7. Wash blueberries and toss with flour/sugar mixture until coated.
  8. Fold coated blueberries into batter.
  9. Pour batter into well greased and lightly floured angel food cake or bundt pan.
  10. Bake for 10 minutes at 375° then reduce oven temperature to 350°.
  11. Bake for 70-80 minutes or until toothpick inserted comes out clean.
