This is the FODMAP Free way to enjoy the fast and simple traditional banana pudding!
  • 1 5.1 ounce box Jell-O Vanilla Instant Pudding & Pie Filling
  • 2½ cups Lactaid Milk (or any lactose free milk)
  • 1 5.5 ounce box Lucy's Cinnamon Thin coodies
  • 3 bananas
  1. Whisk together pudding mix and 2½ cups cold lactose-free milk. Whisk for 2+ minutes. Pudding will start to thicken. Place pudding in refrigerator.
  2. Slice the 3 bananas and divide into two equal parts.
  3. Break up all the cookies and spread half in a single layer on the bottom of an ungreased 2 quart baking dish.
  4. Place half of the bananas over the cookies. Remove the pudding from the refrigerator and spread half of it over the cookies & bananas. Repeat.
  5. OPTIONS: sprinkle with cinnamon or nutmeg for color or additional cookie crumbs.
  6. Cover tightly and refrigerate for at least one hour.
You can substitute any gluten free cookie for the Cinnamon Thins I have suggested. Lucy's also makes maple, oatmeal, sugar and chocolate chip cookies. The original banana pudding recipe calls for Nabisco Vanilla Wafers. Pudding from scratch is almost always better than Instant pudding, but if you need a FODMAP friendly dessert quickly, this is one option!
