This is a great dish for those busy mornings when you need to have breakfast for a group and no time to prepare! Just pop it in the over an hour or so before you want to eat!
  • 1 pound hot bulk sausage (mild can be used – hot is better)
  • 2 loaves gluten free bread (cut or torn into cubes) *
  • 2 cups shredded extra sharp cheddar cheese **
  • 1 cup shredded fontina cheese
  • 8 eggs
  • 3 cups plain rice milk
  • 1 tsp salt
  • ¼ tsp pepper (fresh ground is especially good)
  • 1 teaspoon dry mustard
  1. Crumble sausage and brown. Use a fork to break it into smaller crumbles as it browns. Drain off the fat.
  2. Spread the bread cubes over the bottom of a greased 9 x 13 inch casserole dish. Spread the cubes around evenly to cover the bottom of the casserole dish.
  3. Sprinkle the sausage evenly over the top of the bread cubes.
  4. Sprinkle the cheeses evenly over the sausage.
  5. Use a whisk or electric mixer to beat together the eggs, milk, salt, pepper and dry mustard until bubbly and frothy.
  6. Carefully and slowly pour the egg/milk batter over the top of the casserole.
  7. Cover the casserole with plastic wrap and then cover it tightly with aluminum foil and place in refrigerator overnight.
  8. Put casserole in a cold oven and turn heat to 350° F. Since the casserole is cold, it will pre-heat with the oven.
  9. Bake for approximately one hour or until the casserole is “set” and slightly brown around the edges. If the casserole browns and is still runny, place a piece of aluminum foil over the dish to slow further browning (do not seal the edges).
  10. Allow dish to set for 10 or 15 minutes before serving
* I use white bread and don't use the ends. ** Extra sharp cheddar cheese is a hard cheese and is FODMAP friendly! Serve with fresh berries for a well-balanced, satisfying FODMAP free breakfast! The "Prep Time" noted here DOES NOT include refrigerating the covered casserole overnight.
