Explanation   of Changes

FODMAP FREE Variation of President Obama’s 2013 Inaugural   Luncheon Menu

Since 1901, the Joint   Congressional Committee on Inaugural Ceremonies has been responsible for the   planning and execution of the swearing-in ceremonies and the luncheon for the   Inauguration of the President of the United States at the U.S. Capitol.  For the 2013 Inaugural Luncheon, President   Obama chose to spotlight artisanal, sustainable and, where possible, local   foods from around the country to coincide with this year’s inaugural theme —   “Faith in America’s Future” and supporting First Lady Michelle   Obama’s farm-to-table initiative.

Strawberry   Preserve and Red Cabbage

Cabbage is   out, so replaced it with carrots and was careful about getting strawberry   preserves without fructose.  Tasty, but   not the same dish.

Red   Potato Horseradish Cake

Replaced   the heavy cream and butter with Lactaid and coconut oil with great success.

Baby   Golden Beets and Green Beans

Replaced   the beets with pineapple (honoring the President’s Hawaiian roots) and the shallots with chives.  Distinctly different, but delightful!

Butternut   Squash Purée

On Inauguration Day,   President Obama will enjoy Sour Cream Ice Cream drizzled with Maple Caramel   Sauce on top of Hudson Valley Apple Pie along with artisan cheeses and   honeycomb.  This culinary creation is   not suitable for a FODMAP Free diet for numerous reasons.

We have created a delicious   alternative — substituted FODMAP Free Pumpkin Pie for Apple Pie and then made   FODMAP Free Sour Cream Ice Cream and Maple Caramel Sauce.  We replaced the cheese with lactose free   hard cheese (also made in the USA) and changed the Honeycomb to FODMAP   suitable fruit.  The President loves   pumpkin pie (according to his daughters), so we thought this alternative   would be a good one!
