FODMAP Free Mirepoix

FODMAP free dieters cannot have the original mirepoix because it contains onion and butter. However, other (and FODMAP free or low FODMAP) aromatics often used in mirepoix include parsnip, ginger and tomatoes. For mirepoix, the best alternative to butter is making it the Italian way ... with olive oil.
  • 1 cup green onions or scallions (green part only), diced
  • ½ cup chives, diced
  • ½ cup carrots, diced
  • ½ cup celery, diced
  • 1 tablespoon olive oil
  1. Clean and dice the vegetables. Do your best to make all the vegetables about the same size so they will cook evenly.
  2. Pre-heat the oil in a heavy non-reactive pan over medium high heat.
  3. Sauté the vegetables until tender (approximately 8 minutes).
The cooked (sautéed) mirepoix can be frozen. Be sure to thaw it completely before using; partially frozen mirepoix will cook differently.
