Using our FODMAP Free Brown Stock and FODMAP Free Brown Sauce, you can now prepare a FODMAP Free Demi-glace to add richness, intensity and depth to the flavor of your foods. Demi-Glace can be added to soups, stews and risottos to boost the taste or as a sauce for just the right finishing touch on your entree.
  • 2 cups brown stock (see our recipe for FODMAP Free Brown Stock)
  • 2 cups brown sauce (espagnole) (see our recipe for FODMAP Free Brown Sauce)

  • For Optional Sachet of Spices: --------
  • 1 bay leaf
  • ½ tsp dried thyme
  • 3-4 fresh parsley stems
  1. Combine the brown sauce and the brown stock in a heavy-bottomed saucepan.
  2. Bring mixture to a boil over medium-high heat, then lower heat to a simmer, add the sachet and simmer uncovered for about 20 minutes or until the total volume has reduced by half.
  3. Remove pan from heat and remove the sachet of spices.
  4. Carefully pour the demi-glace through a wire mesh strainer lined with a piece of cheesecloth.
