Savory Sachet of Spices or Bouquet Garni

Preparing a sachet of spices (or bouquet garni) will add the flavor of the spices to your broths without the colored flakes and residue left when adding the spices directly.
  • 2 sprigs thyme
  • 2 sprigs parsley stems
  • 2 bay leaves
  • 6 whole peppercorns
  • 6 whole cloves
  1. Make a small bouquet of the thyme and parsley.
  2. Lay bouquet on a piece of cheesecloth.
  3. Add bay leaves, peppercorns and cloves.
  4. Wrap the bundle so none of the seasonings will fall out and tie it closed with clean kitchen twine.
  5. Drop into simmering stock.
Remove and discard the sachet when the stock has finished cooking.

The amounts here will season approximately 1 gallon of stock.

Do not eat the sachet of spices or forget to remove it before using your stock.

You can make your sachet of spices in any combination to achieve the desired flavor you want. For example, if you want to make mulled wine or grape cider, make your bundle with cloves, cinnamon sticks, whole allspice and fresh ginger.
