Chicken with Dijon Mustard Cream Sauce

This FODMAP Free chicken dish is easy to make and also low fat!
  • 8 pieces of chicken (or 4 chicken breast)
  • olive oil
  • ½ cup Dijon mustard
  • 1 teaspoon dried thyme
  • ¾ cup FODMAP Free sour cream
  • salt & pepper to taste
  • Fresh cilantro or parsley
  1. Preheat oven to 400° F.
  2. Coat a shallow baking pan with olive oil.
  3. Whish together mustard, thyme, and sour cream.
  4. Dip each piece of chicken in mustard mixture. Make sure each piece is completely covered.
  5. Place chicken in greased baking dish.
  6. Cover tightly with foil (so no steam will escape).
  7. Bake covered for 45-60 minutes or until deepest part of chicken reaches 170°.
  8. While chicken is baking, blend salt & pepper into mustard sauce.
  9. When chicken is done, transfer cooked chicken to a serving platter.
  10. Add chicken juices to mustard sauce, mix well and pour over cooked chicken.
  11. Garnish with cilantro or parsley.
