Pork Medallions Diane

- 1 2-pound pork tenderloin, cut into medallions approximately 1 inch thick
- 2 tablespoons olive oil
- 2 tablespoons San-J Organic Gluten-free reduced sodium soy sauce
- 1 tablespoon chopped chives
- Juice of 3 lemons
- Coarse ground pepper
- 2 teaspoons Dijon Mustard
- 2 tablespoons water
- Fresh chives or parsley
- Place cut meat in shallow pan and squeeze lemon juice over all.
- Sprinkle with pepper.
- Cover and refrigerate for an hour or overnight.
- When ready to cook, heat oil in heavy skillet on medium high heat.
- Place meat in hot skillet and cook for 4-7 minutes of each side (turning only once).
- While meat is cooking, mix together soy sauce, chives, mustard and water.
- Remove cooked meat to warm serving platter.
- Add soy sauce mixture to pan juices and cook until heated (approximately 1 minute).
- Drizzle sauce over meat.
- Garnish with fresh chives or parsley.
- Serve immediately.
