Kabobs with Orange and Cilantro

Choose your favorite meat -- pork tenderloin, lamb or chicken -- all are delicious with this citrusy marinade!
  • ¼ cup fresh orange juice, plus 1 tablespoon freshly grated zest, and orange wedges for garnish
  • 1 tablespoon cumin seeds
  • 2 tablespoons coarsely chopped fresh cilantro, plus sprigs for garnish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sea salt
  • ½ teaspoon coarse ground pepper
  • ¼ cup extra-virgin olive oil
  • 1¼ pounds boneless meat, cut into 1½-inch cubes
  • 2 yellow bell peppers, cleaned and cut into approximately 1 inch pieces
  • 1 zucchini, washed and cut into approximately ½ inch wheels
  • Sesame seeds for garnish
  1. In a large bowl, whisk together the orange juice and zest, cumin, cilantro, Dijon mustard, salt, and pepper in a large bowl.
  2. Slowly add the olive oil, whisking constantly until emulsified.
  3. Add meat and toss well until thoroughly coated with the marinade.
  4. Cover bowl with plastic wrap, and let meat marinate for 20 minutes at room temperature. *
  5. Fire up the grill.
  6. Cut up the yellow peppers.
  7. Place 5 or 6 cubes of meat on each skewers, alternating the meat with the yellow pepper and zucchini. Should have 4 kabobs when finished.
  8. Lightly sprinkle each finished kabob with salt and pepper.
  9. Grill kabobs, turning occasionally, until cooked through and slightly charred, about 12 minutes. **
  10. Baste with marinade half way through cooking. Discard the marinade when finished -- do not serve the marinade!
  11. Garnish with sesame seeds and/or fresh cilantro and serve with orange wedges.
If you use wooden skewers, soak them in water for thirty minutes before grilling.

* If you want to marinade the meat over night, transfer meat and marinade to a large zip locked plastic bag and place in the refrigerator. Allow meat to come to room temperature before grilling.

**Cooking time may vary depending on whether you are broiling the kabobs, or grilling them on charcoal or with a gas grill.
