FODMAP Free Chocolate Lovers Peanut Butter Bars

Three layers of sweet decadence ... Chocolate Cookie Crust bottom, peanut butter filling, Almost Fudge topping. A treat everyone will enjoy.
  • Chocolate Cookie Crust (Bottom)
  • 1½ cups granulated sugar
  • ¾ cup gluten free all-purpose flour, sifted
  • 1 teaspoon xanthan gum
  • ¾ cup unsweetened cocoa powder
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon salt
  • ½ cup Crisco solid or dairy free butter, melted
  • Peanut Butter Filling
  • 1¼ cup FODMAP Free peanut butter
  • 1 cup lactose free French vanilla creamer
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • 3¼ cups powdered sugar
  • Peanuts, chopped (optional)
  • FODMAP Free Almost Fudge for topping
  • ½ cup dairy free butter
  • ¼ cup unsweetened cocoa powder
  • 1½ cups granulated white sugar
  • 5 tablespoons lactose free whole milk *
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon
  1. Make the Chocolate Cookie Crust and allow to cool.
  2. To make the filling, stir together the cinnamon, cloves and nutmeg and set aside.
  3. With an electric mixer, beat the peanut butter until creamy.
  4. Add creamer and vanilla to peanut butter and mix well.
  5. Add spice mixture to the peanut butter and beat until well combined.
  6. Mix in the powdered sugar. The peanut butter should be a little stiff.
  7. Stir in chopped peanuts (if using).
  8. Spread peanut butter mixture over the cooled Chocolate Cookie Crust.
  9. Put in refrigerator while making the Almost Fudge topping.
  10. Make the Almost Fudge topping and spread immediately and gently over the peanut butter, sealing it to the edges.
  11. Freeze for an hour (or more) before serving.
Store the peanut butter bars in an airtight container in the freezer. The bars will keep well and no thawing is required before eating them!

It can be difficult to cut cleanly through the topping. To help cut the bars, dip a sharp knife in cold water before each cut.
