FODMAP Free Cookies & Cream Frosting

Yummmmm ... cookies and cream frosting is an excellent choice to jazz up your classic white cake!
  • 2 cups dairy free butter
  • pinch of salt
  • 3 cups confectioner sugar
  • 1 tablespoon clear vanilla extract
  • 1-2 tablespoons lactose free whole milk
  • 1 package Glutino Chocolate Vanilla Creme cookies, crumbled
  1. Beat butter until light and fluffy, about 5 minutes.
  2. Beat in salt, vanilla and milk, mixing until well combined. Start with 1 tablespoon milk and add more as needed after adding the sugar.
  3. Mix in the confectioner sugar.
  4. Refrigerate until ready to use.
The biggest problem with dairy free butter is that it is VERY soft, so frosting is often too soft to use. Try putting the frosting in the freezer for about 20 to 30 minutes or the refrigerator for about an hour before using.

We also suggest you refrigerate the cake until ready to serve.

You will have extra frosting ... but, better too much than too little frosting!
